Frosty Cauliflower &
Blueberry Smoothie

I didn’t believe him when he told me it tasted just like a vanilla shake.

It took me over a year to get up the courage to try it (really, I’m not kidding, and yes, I know I’m a wimp) but one day when my husband, Dr. Mark, was making his (ugh!) cauliflower shake I asked to have a sip. I was stunned at how smooth and creamy it was! It reminded me of soft serve vanilla ice cream. Honestly, that was the first thing that popped in my head. Ok, it might have been the second thing, because it tasted really similar to a McDonald’s vanilla shake from 30+ years ago…have no idea what they taste like now, nor would I want to try one.

Ever since then, I started to slowly introduce cauliflower into our diet…roasted cauliflower, pizza crust made of cauliflower, mac & “cheese” cauliflower, mashed, and riced cauliflower was great to sneak into any casserole.

But I couldn’t leave the smoothie recipe alone…surprise, surprise. So I added blueberries, some times strawberries, and maybe a 1/4 of banana if I wasn’t worried about the carbs. So, feel free to experiment yourself with this recipe and see what you like best.

NOTE: Like I mentioned in the ingredients list below, the smoothie tastes best when using frozen cauliflower and berries, if you add those in. It, obviously, makes it colder but also adds that “frosty” touch. You can either buy a head of organic cauliflower at a local farmers market (which we mostly do) and freeze it or, if you’re lucky, find a bag of frozen organic. I know we’re spoiled living in Northern California with all the organic farmers markets around us, so finding a bag of frozen organic is actually harder!

Ingredients

  • 1 cup cauliflower florets, preferably frozen
  • 1 cup blueberries, preferably frozen
  • 1 cup coconut or almond milk beverage
  • 1 teaspoon organic vanilla extract
  • 1 Tablespoon almond, flaxseed, or coconut oil or even 1/2 avocado
  • 2-3 scoops SP Complete Vanilla nutrient dense protein shake mix*
  • 6-8 ice cubes

Directions

Place all ingredients into blender and blend until completely smooth.

If you choose to sub out the oil with ½ avocado it will thicken it up a bit.
