Avocado Chocolate Mousse

Serves 4-6

Ingredients

  • ½ cup pitted dates
  • 2 large avocados
  • 1 teaspoon vanilla
  • ¼ – ½ cup water or coconut milk
  • ½ cup Standard Process Complete Chocolate*
  • ¼ cup unsweetened cacoa powder

** You could even add a drop or two of mint oil, like DoTerra’s Peppermint

1. Blend dates, vanilla and water or milk in a food processor until
smooth.

2. Add the avocados, discarding the skin, and blend. If it gets too
thick add a little more water or milk to get it to a creamy consistency.

3. Add the chocolate powders. If you do not have the SP Chocolate,
then use ¾ cup cocoa powder. But you will need to add some powdered
or liquid stevia, or xylitol or erythritol to sweeten it.

4. Once you have it the creamy consistency and sweetness you like,
scoop the mousse into 4-6 ball jars or fancy wine glasses.

5. Cover with cling wrap and use a rubber band to hold it in place.

6. Refrigerate for at least an hour.

7. As an extra treat, add a big dollop of organic whipped cream!
